3-Ingredient Healthy Pancakes, Christmas Shopping & Joey Lawrence

The past 2 afternoons I have spent Christmas shopping at the Outlets and the Mall. I seriously need to stop this shopping or at least learn to do it all in one day.

When I entered Macy’s, I was greeted with Santa’s Mail Box and a table for the kiddos to write their letters to Santa. I held back from writing a letter, in fact, I was going to get in closer for an additional picture of the letters, but I heard a girl behind me ask if she could write one and I felt just a little creepy hovering over the table. 3 years ago when Mike and I were Christmas shopping, we stopped at the table so that I could write a letter to Santa. Yes, as a junior in college I asked Santa to make Jay, my college boyfriend, my official boyfriend.

I browsed around Le Gourmet Chef and fell in LOVE with these cookie dishes and holders. I’m debating purchasing a few for my family’s Yankee Swap, or just for myself. 😉

I also hovered over the graham cracker pretzels and gingerbread dip for a little too long. The combo of both flavors created a party in my mouth and I could easily see myself eating the entire jar in one sitting.

After a day of shopping I went to Gold’s to complete my legs and arms workout before going home to demolish my healthy 3-ingredient pancakes.

The texture, taste, and appearance were the best yet. So perfect. This time, I played around with the amounts of ingredients and am happy to report that this is a recipe to keep!

3 Ingredient Healthy Pancakes

  • 2 eggs
  • 1/2 banana mashed
  • 1 tbsp coconut flour

All you have to do is combine the above ingredients in a bowl, whisk it together until you can get a majority of the coconut clumps out, and pour 2 equal sized pancakes on a pan. After that, just monitor the pancakes to get your desired look. I personally love them crispy and lightly browned.

*I do have to mention that I did need to add a splash of almond milk to the batter to thin it out a bit, so it technically should be 4 ingredient pancakes but I do what I want! 😉

Today hasn’t been too exciting to report a full-on novel, but for those who actually care, here are the highlights:

  • 4 mile run, 1 mile walk, core and back work at the gym
  • Christmas shopping
  • the official start of the Christmas Pandora station.. woo woo! 🙂
  • Christmas with the Kranks & Home Alone

Now I’m off to prep tomorrow’s meals before watching Hitched for the Holidays, a Hallmark Christmas movie with the hunkanator, Joey Lawrence. He better have his shirt off so I can drool over his lovely muscles! 😉

P.S, back to work tomorrow to end the holiday weekend. Eww.

Last Minute Packing & Long Drives

In between my P90X, shopping & overheating in the mall (yes I said overheating and not overeating – I get extremely hot when I’m starving!), and doing laundry, I was more than ready for bed by 9. Unfortunately I had laundry in the dryer and a bag that still had to be packed. Every trip I wait until the night of to pack, and then stress over having clothes in the dryer at 10. I clearly stopped learning completely when I graduated from college years ago.

Are you guys last-minute packers or do you have everything packed up with plenty of time to spare to relax?

Last night I purchased 2 winning items. I got new glasses. They’re hipster and I’m obsessed. I also picked up Further Seems Forever new album, Penny Black.

I’m not the biggest fan of this genre of music but Chris is my boy and I need to support my babe, plus their first single, So Cold is SO flippin’ good!!!!!!! Yes, all those exclamation points were extremely necessary.

Fun Fact Friday

Here’s a fun fact for you. My tattoo relates to Chris.

When it was time for bed I was wide-awake, go figure, so I only grabbed a few hours of sleep. Regardless, I woke at 5 am to get a quick workout in so that I when I arrived in Harrisburg I wouldn’t have to take TOO much time from the afternoon to run and do P90X.

Morning Workout

  • 2 mile run
  • 2 sets of 15 stair push-ups
  • 20 mountain climbers
  • 2 sets of 13 standing side dumbbell crunches
  • 1:17 minute plank hold

In accordance with Tina’s 4-Week Plank Challenge, today is a time trial in which I would attempt to hold my regular plank longer than Tuesday’s plank hold.

For those of you who were uninterested in clicking the above link, I DID IT! I held it for an additional 10 seconds. High fives anyone?

Right now I’m blogging from the car. For once I’m not the driver. Shout out to ol’ man Lewis for stepping up. My bro and his fiancé (sounds so weird saying that, but I love it!) were supposed to host both of our families this weekend, but unfortunately Chelsey’s Mom was officially diagnosed with the flu so her parents won’t be able to make it. Such a bummer, they’re so much fun! Hope you feel better soon Mrs. Rink!

Within the first 25 minutes of the trip I was already car sick and ready to blow chunks. Since the drive typically takes anywhere from 7 to 8 hours, I was extremely nervous that it was going to be a miserable ride, but luckily after about an hour the feeling passed. I normally don’t get car sick, so I’m blaming it on the fact that I stupidly took supplements on an empty stomach. Dohhhhh!

We still have about 4 ½ hours left in the drive so I’m going to have to start entertaining myself. I have several fitness magazines to get through and also have Gone Girl to read.

As part of Peanut Butter Finger’s book club, Gone Girl was actually the September book, but my library was a little slow in getting it to me. I placed myself on the wait list in August and I just received it last week! I might be nearly 2 months late but better late than never right? Plus, I finished October’s book 13 Reasons Why in 3 sittings so at least I’ll be able to participate in the Book Club discussion this month!

Peanut Butter Crackhead

I don’t even know where to begin. I feel like I’ve done too many things since my last post this morning to function properly.

I got my flu shot today, chose the right arm since that’s my pimp arm. Figured it’d recover quicker, you know, with all that muscle.

Worked out in what felt like a sauna of a ladies gym. I think I might have sweated more in the gym than I do when I actually go in the sauna. I also made the mistake of wearing a workout shirt that should have been worn when I workout in the main gym and not the ladies gym.

My coworker got a kick out of it when I walked into her office wearing it. My Dad, on the other hand, wasn’t pleased when he saw me wearing it for the first time.

The front says, “Since you’re behind” and the lower bottom of the shirt in the back says, “How’s Mine?” Get it? Say it with me now. Since you’re behind, how’s mine? Totally not meant to be worn when working out in a women’s only area. Live and learn.

Afternoon Workout

  • 2 mile run
  • 15 minutes cardio
  • Stretching
  • 20 air squats

After my workout I scarfed down my garbage scramble which wasn’t as good as the first batch I made since I had to substitute spinach for broccoli.

After work I went  home quickly and whipped up a “Singles Only” version of pumpkin french toast with syrup and cool whip on top. I used a sandwich thin and soaked it in a mixture of 1 egg, cinnamon and a scoop of pumpkin. Some crazy put the cool whip in the freezer and I mistakenly nuked it for too long, creating the soupy look.

The french toast was to die for. God I need to domestic myself. These breakfast for dinner meals need to go. As good as they are, this woman was meant to cook meals for others.

After my win in the kitchen I went shopping in search of a new pair of jeans to rock with my new boots but came up empty-handed. I was actually pretty happy when the boy working at American Eagle told me he didn’t think I needed that size of jeans. He clearly didn’t check my ass out since I heard him greet another girl with a “hey girllll!”

I actually felt pretty stylish today. Usually my outfits don’t get compliments. I also work with 50+ year old civil engineers, who as my boss says, “aren’t used to a pretty little thing buzzing around the office.” Those men avoid my office like the plague, but it’s mainly because the company brought me in to tie up loose ends to make the proposal process quicker. Pretty sure whenever they get an email with my name on it they run and hide. Such a great effect to have on men. 🙂

After no luck with jeans, I swung by Target to pick up so many peanut butter treats. Sadly they’re not for me and I have a fun project for them. I did however snack on a little pb and pretzel action.

My college journalism professor would probably mark this up in red ink for how I’m ending this post but screw it. I’m tired. Time to go lay in my bed. Sweet dreams peanut butter crackheads.

Girls Weekend: Shopping Spree & Boston Adventures

What a fun weekend! I spent it with two of my favorite girlfriends, where we shopped and explored Boston.

Saturday

On Saturday I hit the gym where I completed a 4 mile run, 25 minutes on the unknown cardio machine, 15 on the elliptical, and 10 minutes of spinning. My legs were so tight that the spinning was just me pedaling at a sprint pace to loosen the tight muscles.

After my workout, I cleaned up, ended my 6 years and 10 month relationship with Planet Fitness, my old gym, and then went over to Lindsay’s for a girls afternoon. After playing with Jackson, her little kitten for a bit and making him do flips in the air, Linds showed me the Halloween outfits she bought for him.

Jackson does NOT enjoy being a monkey. We thought he made an adorable monkey. 🙂 After kitty time, we attacked Marshall’s, and boy did we go a little crazy!

We didn’t do THAT bad of damage, well, Linds left with $80 of product and I left with $112, but I had 2 big-ticket items, including new boots and a new purse!

Absolutely loving the fall colors! I also snagged a new sports bra and cute top for $10 each off the clearance rack, oh and a bag of chocolate covered espresso beans which were my dinner last night…. yum!

Sunday

Today, my cousin Nikki and her neighbor ventured down to Boston for a day full of shopping and eating.

Before Boston, I woke up early and hit the gym for a good workout, consisting of a 5 mile run and 40 minutes on the unknown cardio machine, followed by a few weights.

In Boston, I managed to drop my favorite sunglasses, step on them, and lose an eye.

Sad pout but beautiful purse! Later in the day I managed to fix my sunglasses so I can be back to my stylish ways. We wandered around Faneuil Hall for a bit, grabbed lunch at Cheers, which for me consisted of a veggie burger and fries, which were both a major disappointment.

I found this amazing hat that I’m kicking myself for not buying.

After a full day of bouncing in and out of shops and the girls leaving with bags full of Celtics girl, we headed back to our car after the rain began to fall.

The weekend was amazing and I’m so glad I got to spend it with my loves.

I hope you all had a great October weekend as well! I know I’m very excited to eat healthy again this week. All that chocolate and greasy food is weighing me down!

Continent Pumpkin Pancakes & a New Ab Workout

Last night after work I went shopping for new pants and new boots. Well, guess what?! I failed. Twice. Maybe three times since I was so hungry and had to call it quits early on in the shopping game. I do that all the time. My raging appetite always cuts shopping short.

When I get hungry I get cranky, and when I get cranky and there’s no food in sight, my eyes turn red and I go ten kinds of crazy. I might not be THAT dramatic, but I can get grumpy if I’m thirsty or hungry, which is why my purse looks like a food cabinet. There’s always something in there, whether it be a protein bar, nuts, a banana or an apple. My ex used to always make fun of me because I would always just “whip it out,” but I’m almost positive my stash saved him more times than it did me.

I found several pairs of boots that I loved but my damn runners’ calves made it impossible to put them on buy them. Those boots are made for little girls who don’t have muscle! Make boots for those ladies with power running through their veins! Haven’t we learned that muscle is the new skinny?

After returning one sweatshirt and becoming $19.99 richer, I headed home and got to making Peanut Butter Fingers’ Pumpkin Protein Pancakes. I had trouble with my little blender and gave up on getting the batter as soupy as I had wanted, so I gave it a whirl regardless and ended up with continent pumpkin protein pancakes.

They weren’t as pumpkin-y as I was expecting, but I’m glad I gave them a go! I absolutely love her Almond Butter Pancakes, so I think her next pancake recipe I try is her Pumpkin Almond Flour Pancakes. Gonna be another rainy weekend so I think that will be on the menu!

This morning I woke up bright-eyed and bushy-tailed. I was excited to see how my legs were going to handle my am run after 3 days of hardcore workouts. My legs carried me a little farther than yesterday, but my calves and ass were burning! After my 3.3 mile run, I decided to switch up my post-run workout and did the “1-2-3 Ab Workout” that Alaine posted yesterday.

This ab workout kept my abs working straight and it was actually fun going from one exercise to the next and alternating reps. This is a keeper and it fit perfectly into the allotted time I have after my morning runs. Thanks girl!

This mornings breakfast was once again overnight oats. My girl Allie (I know too many Allies) who just moved to South Carolina to teach, gave me the idea of strawberry banana oats. Wham bam thank you m’am!

Strawberry Banana Overnight Oats

  • ½ cup rolled oats
  • ½ cup plain Fage Greek yogurt
  • 1/3 cup Almond Breeze Unsweetened Vanilla milk
  • Chia seeds
  • 1 tbsp strawberry jam
  • Cut-up banana – Half went in my mouth

Preaching & a Garbage Lunch

Thankful Thursday is coming a day early. I could easily save this post for tomorrow or at least the “thankful” part of it anyways, but to be honest, I woke up with such a great attitude that I can’t stop preaching!

Time to Preach Your Face Off!

Waking up refreshed got me thinking about how great life really is when you take the time to appreciate the little things and not just the big things. I’ve changed so much over the past year, let alone months, and I’m proud of how strong I am, physically and emotionally, and I’m happy that I’ve experienced all the positive and negative moments in my life so far. It shaped me into the lady (yes I can be classy!) I am today and I love who I am.

I’m thankful that I can support myself, have a career that involves my degree, can put healthy food on my table, take vacations, treat others and myself, but most of all, I’m thankful for my friends and family who have always supported me through the ups and downs.

Stop and take a minute out of your day and think about how GOOD your life is. Make a list in your head, on paper, on your phone. I don’t care how you do it, just be thankful. And while you’re at it, let those that you love know how you feel. Put a smile on someone’s face. It’s contagious.

Want to know what has me smiling this afternoon?

Nope, not the R.I.P.P.E.D class Jen and I took on our lunch break. Holy shit shat that shit was cray! If I thought my midg legs hated me this morning on my run, then they are planning my murder. If tomorrow morning I’m only able to run 3 steps, well, you have your reason why. After sobbing gutting through the class, I earned this smile.

Most amazing lunch in the history of lunches! Mark my words. Come over. Right now. I’ll make it for you. If you’re a guy, you get a great view and a great lunch. If you’re a girl, then you get a great lunch time gossiper and a great meal. Calling all you single men out there!

Today’s menu: Garbage Lunch

You know when you don’t know what to make so you grab random things that are in your fridge? Wish I had jumped into the “garbage” a long time ago! This little All-Star consisted of 4 ingredients.

The Garbage Scramble

I started by spraying a pan with Olive Oil Pam spray and warmed up the veggie burger. Once the burger was cooked, I broke it into pieces, poured the eggs and broccoli in, and scrambled the mess together before throwing the cheese on and mixing it up again.

The flavors bursting out of the veggie burger bites were incredible, and I don’t even know how to describe it enough to give it justice. The eggs practically went unnoticed, as the VB bites stole the show. All that protein better fuel my worn out muscles.

I see a little shopping in my future after work tonight. I need a new pair of black jeans/jeggings as I’ve worn a hole in the ones I have on today. I’m also in search of a cute pair of brown riding boots, so I hope to have a little luck tonight and don’t go too poor!

Reunion with the Best Friend: Shopping Style!

This morning I woke up to a wet cat crawling over my face and a dog breathing heavily near my ear. Even when there isn’t a phone alarm set, my house is never short of an “animal” alarm. I can’t figure out which was worse. A wet cat or a panting dog. I’m leaning towards wet cat, only since it was cold in my room.

I was able to lounge around in my sweats for a little bit before I called Apple support and got my iTunes fixed. Needless to say, I can FINALLY buy music again! You see, when you set up your iTunes with a college email address, and then 4 years later upon graduation they tell you it’s deactivated a year after graduating, you kind of get screwed when your “lost password” attempts get sent to an email you no longer have access to.

I really want to cruise down the streets blasting Bieber’s “As Long As You Love Me,” so I finally had the motivation to call Apple. Mission accomplished. Time to spend $$$$ on the Biebs!

After that success I hit up the gym for a shorter than planned gym session. I completed a 4 mile run and finished with 10 minutes of additional cardio before I started feeling sick and left. All along I felt like I was getting better this week but of course my cold really had to come back full force for the weekend.

I polished off half a batch of Raspberry Vanilla Overnight Oats in my favorite jar, and am now off to the Merrimack Outlets to do a little shopping with my best friend Lisha!

Ringing Your Shirt of Sweat

This am I set out for an early run, as I wanted to get a little shopping in before the clouds cleared and the heat arrived. I went off on my run, and by the time I reached 1.25 miles, I had a little friend with me.

This little guy came wandering down the road and decided he wanted to get a little exercise in too.

What a lil’ Cutie!

He seemed so thirsty and panting heavily so I waited around the street for a few minutes to try and locate his owner, but had no luck until a lady running with her two dogs came up. We talked about this little guy for a few minutes and she told me the owner’s do this a lot and the dog just wanders around the street. How awful! I apologized for stopping her during her run and proceeded to carry this cutie back to his house.

Later on my run we passed each other again and she asked if I had luck returning him. There really are some caring people in the world.

Can we just discuss for a brief second how hot it was on my run. I had to ring my shirt several times because it was drenched in sweat. Halfway through my run there wasn’t a single dry spot on it. Ick!

Oh So Schweaty

 

After my run I threw in a little stretching and core work before shoveling Banana Bread Oatmeal down my throat and chugging ice-cold water. Damn it was hot out there!

Off to play with my neighbors’ dog for a bit then heading out in hopes of finding a few cute tops.
