Egg in my Oatmeal

Hey guys! The past few days I’ve had the mindset to post morning and night but the holidays have literally snuck up on my ass and have kept my nights pretty crazy. By the time I’m done, looking at my computer screen is honestly the last thing I want to do. I’ve been waking up to a butt load of text messages from friends sent around 9 pm that start out friendly and then quickly become grumpy texts because they think they’re being ignored. Oh the glories of going to bed early and waking up early.

Last night was another busy night. Both of my parents had holiday parties to attend, so I was in charge of the pup. By the time I got to him it was around 5:30. We played quickly, fed the meowing cat, and then jumped into my car to run errands.

He had fun making me freeze to death while he stuck his head out the window as we drove around town to hit up the library, grocery store, and gas station.

This is Kip’s “I mean business face.” I made him about 20 minutes late for his typical dinner and I could easily tell he wasn’t pleased with my shenanigans.

I went a little crazy at the library and picked up quite the assortment of books.

2 Christmas books: one a romance and one a mystery, and then a summer-ish book. I usually only leave with a max of 2 books, but I couldn’t choose between the Christmas books so I said screw it and left like a nerd with 3 books.

Oh and the highlight of my trip and night? Buy one get one free on tubs of Cool Whip! I had an Apple Pie Quest Bar that I wanted for dessert last night and part of my trip to the grocery store was to find a “healthier” option for a topping. Bingo!!

Along with Walden Farms pancake syrup, this baby was a knock-out! It seriously tasted like warm apple pie.

Since I ate about half of one of the Cool Whip tubs last night (addicting!), I wasn’t sure how I’d feel this morning, but I was surprised when I got a great 4 mile run in FIVE minutes quicker than usual. What the?! I honestly do think I can attribute this to my strength training and working with a personal trainer the past 5 ½ weeks. The improvements I’ve seen are really blowing me away. Best $$$$ I’ve probably ever spent.

Morning Workout

• 4 mile run
• 4 sets of 15 stair push-ups
• 10 burpees with bicep curl to overhead press
• 50 crunches and 50 side-to-side crunches
• 1 minute plank hold and :30 second holds each side
• 50 heel touchers
• 2 sets of 20 plank tucks
• Stretching

I felt so good this morning after that workout! Talk about a great way to start your Friday.

Today at work we have our holiday party, and since us girls in the Marketing Department oversee it, we get to start setting up in a little bit. Since I knew my morning and day was going to be a little different, I made sure to eat a filling breakfast since I’ll be in “go-go-go” mood very shortly.

This morning I whipped up a bowl of peanut butter banana oatmeal, but this time I spiced it up a little. Along with my usual additions of chia seeds, flax, cinnamon and Truvia, I included an egg white and a little vanilla protein powder. I’ve seen this idea pop up on blogs and Instagram, and figured this morning was the best day for it.

This had to have been one of the better bowls of oatmeal I’ve had! I love the addition of the egg, which you can’t even taste. I put a dollop of peanut butter on top before leaving for work, and when I sat down at my desk, it had melted everywhere. So. Amazing. Holy. Schnikes.

Now that I’m full, I have a little bit of work to do before a fun afternoon and evening full of a Yankee Swap with the marketing girls, amazing food, an ugly sweater contest and a white elephant gift exchange with the entire company.

Decorating the Christmas Tree!

To all of my 121,300 4 followers, I hope you have kept extremely busy this weekend and haven’t missed my lack of blogging this weekend. I have to admit that it felt nice to step away from my computer yesterday. Some times you just need an electronic free day, especially during the holiday season.

Yesterday I started my day with a 4 mile run before running a few Christmas errands and picking out our family Christmas tree.

My family has never been into fake Christmas trees or “tagging” our trees. In the Lewis family, our tradition is to pile into the truck and drive around all afternoon to the various landscaping companies and browse their selection.

For the past 2 years, I’ve picked out the winning tree at our first stop and within a handful of minutes.

After getting home, I ate a quick bowl of Peanut Butter Banana Oatmeal before heading over to Lindsay’s for a girls night. We enjoyed wine, talked about our guy troubles, reminisced all our old college memories, and played with her little boy, Jackson.

Jackson had a blast strangling me by attacking my sweatshirt strings. I even found him halfway up the Christmas tree. That boy is the cutest devil ever!

Sunday

Today has flown by, even though I feel like I haven’t done too much. I woke up around 9:30 and went for a quick 3 mile run before heading out for a movie date with my momma to drool over Gerard Butler and James Tupper in Playing for Keeps.

Oh my goodness, so much deliciousness in that movie! My Mom and I were both and heaven and loved every minute of the movie.

After the movie, My Mom and I came back to decorate the Christmas tree and laugh over our favorite ornaments.

Since my Dad set the tree up and put the lights on, he left the decorating to us. The angel will go up when Ryan arrives home on Christmas Eve. That’s his job, and don’t worry, it always results in a ridiculous photo shoot.

This one is for my best friend, Goldie who I had for 14 1/2 years. He was gold, how original with his name right? I miss that little boy!

Now that the tree is up, it’s truly beginning to feel a lot like Christmas!

Now it’s time to drag my butt to the gym and complete my Total Body Workout before hunkering down on the couch for the evening with Christmas Gerard Butler movies. 😉

Peanut Butter Banana Oatmeal

I have a new favorite breakfast. This is a miracle!

This entire week my nights have been pretty busy and I haven’t had the opportunity to make some of my favorite meals for dinner, so I was excited to have last night all to myself to get creative with dinner. I love breakfast foods and could easily eat breakfast for lunch and dinner, but when I work early, it’s very difficult and impossible to make elaborate breakfasts. I usually have to stick to yogurt bowls, protein shakes and overnight oats.

Last night I knew exactly what I wanted to make. I previously failed at making oatmeal with peanut butter and have been wanted to redeem myself ever since. I have seen so many bloggers rave about peanut butter oatmeal and I could never understand where their love came from, until last night.

Peanut Butter Banana Oatmeal

Peanut Butter Banana Oatmeal

Ingredients:

  • 1/2 cup oats
  • 1 cup water
  • Dash of Cinnamon
  • 1/2 tbsp Chia seeds
  • 1 scoop Peanut Butter
  • Banana slices
  • 1 Truvia packet or sweetener of your choice

Directions:

  1. Mix your oats and water in a microwave safe bowl, and microwave for 3 minutes or until the oatmeal is at your desired consistency
  2. Add in your chia seeds, cinnamon and sweetener, and mix together
  3. Garnish with banana slices and peanut butter, mix and enjoy!

This had to have been one of the best bowls of oatmeal I’ve ever had, and I’m not just saying that either. The peanut butter was extra creamy and melted and mixed in perfectly in every spoonful. It left me with one full and happy belly!

Can’t wait to make this breakfast this weekend!
