First Snowfall of the Winter Season

It was SO nice to be back at the gym during my lunch hour. Monday I couldn’t due to babysitting and yesterday I came in late after voting, so today was my first day back in the gym since Saturday. I missed Gold’s! There’s just something about working out at a gym with other like-minded individuals. Sure beats a treadmill run in your basement or sweating your face off in your living room with Tony Horton!

During my gym visit I ran 1.5 miles before jumping on the vertical elliptical to bust out a 17 minute interval session. I played around with the inclines: 5, 10 and 20 and had fun mixing the order up. I honestly don’t know where my time went but I feel like several months ago I was getting a lot more finished during my lunch time workouts.

My appetite has been through the roof today so I was anxious to complete my workout and shower up so I could eat a healthy lunch.

Last week I mentioned that when it comes to home-made salads, the dressing makes or breaks it. When I dine out, the salads are extremely appetizing and that’s usually my go-to order, especially if fruit and nuts are included. I find that preparing my own salad at home lacks excitement. On a scale of 1-10 it doesn’t even earn a 1, so when I found a winning salad dressing in my fridge last weekend, the at-home salad excitement scale went up dramatically.

This salad was big and crunchy, and you can bet your peanut butter hearts that I demolished the entire container. Into the bowl went a bag of Veggie Lovers salad mix, diced cherry tomatoes, diced cucumbers and shredded Sara Lee Low Sodium Turkey slices. I tossed it in an Italian dressing and called it a meal!

Today is supposed to be the first official snow fall of the winter. Ugh. Go away winter! My phone alerted me around 4 that we were in a winter storm advisory, as we’ll be getting 1-3 inches of snow, sleet and freezing rain tonight.

Why can’t the first snowfall be pretty? The only times I enjoy snow is the first snow and also on Christmas Eve and Christmas, other than that, it can go away.

I’ve lived in New England for 24 years and have only gone snowboarding once! Growing up between New Hampshire and Vermont you’d think I’d have gotten bit by the skiing bug, but it never happened. As a kid of course I loved building forts and igloos, having snow ball fights with my friends, and going sledding, but as I’ve grown up, those activities just don’t happen anymore and I find myself cursing snow.

I think this winter I’ll change that and bring back the little kid in me! 🙂

With all this snow talk I’m becoming excited for the holidays and Christmas. I think it’s completely necessary to start my Christmas movie watching tonight with my favorite, The Christmas Card!

Healthy Chix Nugs

Tonight I created a healthy spin on one of my favorite childhood meals; chicken nuggets. Or chix nugs as we used to refer to them as little drunk college kids.

For my healthy chix nugs, I only needed 3 ingredients.

All the Ingredients, So Simple!

Ready for Cookin’!

Ingredients

  • Chicken Breasts
  • Egg whites
  • Wheat Germ

Directions

  1. Preheat oven to 350 degrees
  2. Line a tray with tin foil
  3. Spread wheat germ on a plate, as much as needed
  4. Crack an egg; dispose of yolk and put egg white into a bowl – I needed 2 egg whites
  5. Cut the chicken breast into bite size pieces and dip each piece into the egg white mixture, and then roll the chicken pieces into the wheat germ
  6. Place all chicken pieces onto the tray
  7. Bake for 25 minutes, and flip over when 10 minutes remain

Dunk in ketchup and enjoy!

Preaching & a Garbage Lunch

Thankful Thursday is coming a day early. I could easily save this post for tomorrow or at least the “thankful” part of it anyways, but to be honest, I woke up with such a great attitude that I can’t stop preaching!

Time to Preach Your Face Off!

Waking up refreshed got me thinking about how great life really is when you take the time to appreciate the little things and not just the big things. I’ve changed so much over the past year, let alone months, and I’m proud of how strong I am, physically and emotionally, and I’m happy that I’ve experienced all the positive and negative moments in my life so far. It shaped me into the lady (yes I can be classy!) I am today and I love who I am.

I’m thankful that I can support myself, have a career that involves my degree, can put healthy food on my table, take vacations, treat others and myself, but most of all, I’m thankful for my friends and family who have always supported me through the ups and downs.

Stop and take a minute out of your day and think about how GOOD your life is. Make a list in your head, on paper, on your phone. I don’t care how you do it, just be thankful. And while you’re at it, let those that you love know how you feel. Put a smile on someone’s face. It’s contagious.

Nope, not the R.I.P.P.E.D class Jen and I took on our lunch break. Holy shit shat that shit was cray! If I thought my midg legs hated me this morning on my run, then they are planning my murder. If tomorrow morning I’m only able to run 3 steps, well, you have your reason why. After sobbing gutting through the class, I earned this smile.

Most amazing lunch in the history of lunches! Mark my words. Come over. Right now. I’ll make it for you. If you’re a guy, you get a great view and a great lunch. If you’re a girl, then you get a great lunch time gossiper and a great meal. Calling all you single men out there!

Today’s menu: Garbage Lunch

You know when you don’t know what to make so you grab random things that are in your fridge? Wish I had jumped into the “garbage” a long time ago! This little All-Star consisted of 4 ingredients.

The Garbage Scramble

I started by spraying a pan with Olive Oil Pam spray and warmed up the veggie burger. Once the burger was cooked, I broke it into pieces, poured the eggs and broccoli in, and scrambled the mess together before throwing the cheese on and mixing it up again.

The flavors bursting out of the veggie burger bites were incredible, and I don’t even know how to describe it enough to give it justice. The eggs practically went unnoticed, as the VB bites stole the show. All that protein better fuel my worn out muscles.

I see a little shopping in my future after work tonight. I need a new pair of black jeans/jeggings as I’ve worn a hole in the ones I have on today. I’m also in search of a cute pair of brown riding boots, so I hope to have a little luck tonight and don’t go too poor!

Smoothie Overload!

By the time I left work yesterday I was pretty sure I was going to go to bed upon walking through the front door at 5:25. This girl was tired and needed sleep. Instead of being a complete waste of life, I made a wicked (shhh I’m from New England) good sandwich on a sandwich thin. I had 2 slices of turkey, a slice of american cheese and a slice of ham, toasted in the toaster oven. This baby served alllll my needs.

I had actually planned on having a tuna melt, and not to drop names, but a certain male in the house only left about 2 bites of tuna in the container. Dude, finish the damn tuna if that’s all you’re gonna leave! Actually, I’m not one to talk. I left 3 of those chocolate covered acai berries left in the bag. I thought if I ACTUALLY finished the bag I’d be considered a fat ass.

After dinner, I changed and headed over to Primetime Wellness Club to pick up 2 smoothies. One for dessert and one for today’s breakfast. I ended up ordering the Butterfinger, which wasn’t as good as the others I’ve tried, and the french toast smoothie for this morning. I think the Butterfinger smoothie just wasn’t think enough, almost as if there was just a little too much liquid in there.

I also received an aloe water which I enjoyed last night and is completely addicting, and a raspberry tea with aloe in it for today. You receive a tea for free with your smoothie so it’s a good deal when you pay $6.

I also forgot to mention that I came home to my new subscription of Fitness magazine! I’ve read it before and since I have enough fitness magazines, I knew I didn’t need another, however one day I received a postcard offering a year subscription for $5. I’m sorry but even if you only read 2 magazines a year, you’re still getting a deal. Subscription purchased.

Subscription received… WITH an exercise band. Score! I haven’t seen one of these since being in my memere’s old house back 16+ years ago.

This morning was a bitch. I went to bed early last night and took a sleeping aid and was out of it when I woke up, since the aid was still wearing off. My body felt beat. I’m blaming it on the additional plank exercises I added to my workout, and I wasn’t sure if my legs wanted to carry my on my run. Oh but they never fail and they did.

Morning Workout

  • 3.3 mile run
  • 1 minute plank
  • 20 mountain climbers
  • 50 crunches and 50 side-to-side crunches
  • 1 minute plank
  • 20 mountain climbers
  • Stretching
  • 100 jump ropes.. yes that’s the number of times I jumped with my imaginary rope 😉

My french toast protein shake made my morning 20 times better than yours. I’ll be ordering that sucker again.

8 hours and 15 minutes until I see this ridiculously gorgeous piece of meat man.

This Day is Flying By.. Oh Wait, I Just Jinxed Myself

Today was flying by until Lindsay emailed me at work and asked how my day was. Shit hit the fan, as in, my day started dragging after I bragged my toosh off about how quickly the day had gone by. Karma, cool, thanks.

My appetite returned and I chowed down on leftovers from last night. Well, to be honest, since I wanted to puke when I saw the chicken on the grill and opted for tortilla chips to cure my unknown illness, today’s lunch technically wasn’t “leftovers” for me. I’ve been going through a phase where I only enjoy a sweet marinade on my chicken and salmon, so since the flavor wasn’t up to my picky standards, I doused it in ketchup. I put ketchup on my ketchup, what up now?! I did this all weekend, which concerned my cousin, then entertained her as I grabbed packets of ketchup at a gas station on our drive home yesterday afternoon to douse my leftover chicken from Saturday night. I’m weird, deal with it.

In about an hour I’m off to the gym for a quick run before spinning at 4:30. I’m SO excited for spinning, as I haven’t been able to go in over a week. I signed up for tomorrow night’s class as well so I’m thrilled for the classes I have lined up so far.

What’s even more exciting is that I have a business meeting with Primetime Wellness Club, a local smoothie and fitness cafe in the heart of the State’s capital that offers protein smoothies that use Herbalife and have aided in monumental weight loss endeavors. I was introduced to the cafe on Saturday by my cousin and was excited by their delicious and healthy smoothies, and also by the sign that mentioned they were looking to expand into other locations and states and to discuss if interested. Guess who brought it up? This girl did! I meet with one of the head honchos, Melyssa, tonight to discuss their business plan and to get more information on the company and the process of being a part of their team.

I’m also planning on getting the Reese’s Peanut Butter protein smoothie. That or the Butterfinger. Or the Grasshopper. Crap, I can’t decide. 35 flavors is too much. Looks like I have 35 flavors to try. Is it 7 yet? JUST WANT A GODDAMN SMOOTHIE.

A Slow Friday

Today has DRAGGED. I cannot stop watching the clock, but that’s because I have 2 special guests that will be at my house when I get home from work. Ryan and Chelsey (my brother and his gf of 6 years)! I’m so excited to see them, even though I just saw them at Viss & Kate’s wedding on the 10th. They’ll be here only for the night as they are attending Chelsey’s childhood best friend’s wedding in Burlington, VT.

Vacationing in Napa Valley

Since today has dragged, again, I had no appetite but wanted to eat something. Again, I had a small handful of raisins and a few sunflower seeds before having my protein packed yogurt.

This just might be my new favorite yogurt concoction. Before, I have been insanely obsessed with Chobani, but after trying to grow accustomed to plain greek yogurt, I finally found the winning combo.

Chocolate Peanut Butter Yogurt ❤

Fage 2% plain greek yogurt, with a spoonful of my chocolate peanut butter protein powder, and a little trail mix. This is SO SO good.

Since my pants were feeling a little snug today, I knew I wanted a cardio focused workout this afternoon. Before heading out the door, I created my game plan.

Afternoon Workout

  • 1.5 mile run
  • 10 minutes stair climber, 36 flights
  • 10 minutes nordic trainer
  • 2 sets of 13 lat pull-down, 55 lbs.
  • Stretching
  • 2 sets of 25 medicine ball sit-ups

Feeling gooooood! Post gym I wasn’t extremely hungry when I got back to work, but decided to nosh on a banana that was soon to go bad per my standards, a Starkist 100 calorie tuna packet and about 1/3 of a sweet potato.

90 more minutes than it’s the weekend and I’m a free girl! Hope you all have a great Friday evening! 🙂

Excuse Me While I Lumberjack

This afternoon’s gym session was a toss-up between good and bad. Well not bad, just went in a different direction than I had planned.

I started off with a mile and a half run before jumping on the stair master and walking 10 minutes, which equaled 39 floors. What what! I had planned on going into the women’s gym to work on my abs and maybe just maybe get a quick 5 minute workout on the nordic trainer, but BOTH were taken. I’m not just talking about my special corner where I work da abs, but even the 2 mats in front of the room were being used. Grrrr!

Instead, I decided to complete a quick strength training circuit before heading back to work.

Afternoon Workout

  • 1.5 mile run
  • 10 minutes stair master, 39 floors
  • 3 sets of 13 lateral pull-downs, 55 lbs.
  • 3 sets of 13 back extension, 100 lbs.
  • 2 sets of 13 medicine ball lumberjack squats (1 set each side)
  • 2 sets of 13 medicine back lumberjack chops

To be honest, I’m not even sure if “lumberjack chops/squats” are even the correct terms, but several months ago I found the exercises in one of my workout magazines and recall the word lumberjack in it.

Here’s a brief rundown of my so-called lumberjack exercises:

Medicine Ball Lumberjack Squat: Stand as if you’re ready to squat, feet a little wider than hips, and hold a medicine ball at your waist. As you squat, bring the medicine ball to either your left or right side. Upon standing, swing the medicine ball to your opposite shoulder. So squat, medicine ball to your left foot, and upon standing, medicine ball swings above your right shoulder. Do all reps on one side and then repeat the other side.

Medicine Ball Lumberjack Chops: This is the same as the squat, but you’re just not squatting. Stand with feet wider than hips and hold medicine ball to one side at your hip. Bring the ball above your opposite shoulder, and complete all reps on that side before switching.

They’re awesome exercises for your shoulders, butt (if you squat) and your core. Plus, you feel pretty damn badass while you do it. 🙂

After my workout, I got back into work mode while I demolished leftovers from the other night. Grilled chicken, veggies and half a sweet potato.

Paleo Almond Butter Pancakes.. It’s What’s for Dinner

I had my mind-set on dinner all day. Once I know what I want to eat, there’s nothing else I will shove into my mouth. Today, I was dead set on Paleo Almond Butter Pancakes, a recipe that I came across from Julie, aka Peanut Butter Fingers, aka my favorite blogger, aka my life idol.

Almond Butter Pancakes

  • 1 cup almond flour
  • 1/4 cup almond butter
  • 3 eggs
  • 1 tablespoon honey
  • 1 teaspoon cinnamon

Directions:

  • Heat pan to medium heat, spray pan with cooking spray and let heat up
  • Mix all ingredients together and pour the batter into the pan
  • When the bottoms brown, flip to the other side to your perfection
  • Top with anything your little heart desires and eat away

Paleo Almond Butter Pancakes

I doused mine in maple syrup. Now that’s Paleo. Go ahead and judge me. The pancakes were too delicious for me to even care.

My only concern was that the batter wasn’t runny enough. I literally had to work the batter off the spoon. I’m thinking maybe less flour next time or an additional egg white. I love playing around with recipes so once I buy a new jar of almond butter this weekend, that’s the first thing I plan on doing!

Wedding Day on the Cape

Nothing better than having a Friday off! This morning I was able to sleep an hour past my usual alarm, but had a lot to do before heading to the Cape for a friend’s wedding. I hustled out the door and went for a 3.15 mile run, showered the sweat off and booked it to the gym to get a little more done. I finished up my run and made it to 4 miles before only lasting 2 minutes on the rowing machine. After that, I worked on my core and stretching in the women’s gym.

Morning Workout

  • 4 mile run (3.15 outside)
  • 2 minutes rowing, level 6
  • 2 sets of 25 medicine ball sit-ups
  • 20 side-to-side medicine ball sit ups
  • 20 side-to-side crunches with medicine ball on stability ball (phew!)
  • 20 crunches with medicine ball on stability ball
  • Stretching

Good AM workout!

I ran past an orange peel on my run through my neighborhood and had a hankering for a juicy orange, so on my way home from the gym I stopped at Hannafords and picked up a little fuel for the drive to the Cape.

I made my Green Monster protein shake which just wasn’t doing it for me, so I cut my oranges and went through my typical orange eating routine. See below.

The drive to the Cape was quick and painless and I was able to get a little reading done, and flipped back and forth between The Snowman and my Competitor magazine.

I also found time to paint my nails during the drive. This takes a skilled person, let me just tell you. Although I think we got high from the paint fumes.

Switching Up the Lunchtime Routine

Spin class was about half full today, not sure if that surprised me or not. I had no expectations about Rachel the instructor, even after picking Jen’s brain. A few minutes before class, a tough but cute looking lady came entered in black pants, a black top and a pink bandana on. Almost reminded me of badass Matthew McConaughey.

The first track she put on reminded me of something at a rage, Slipknot? It was awful and not my taste at all. After the second song came on, which was pretty similar, I thought that maybe this genre of music would be motivating, but as class wore on, it just wasn’t. We did a lot of hill climbs in position three, my LEAST favorite. My arms were burning, and at times I wanted to take it easy and rest a little on my forearms but I quickly reminded myself that I was here to get better and get my ass kicked, not to take it easy.

While the instructor was really nice, she wasn’t extremely motivating like Eve was on Monday. I only took this class because the evening class was canceled and I really didn’t want to wait until Monday for another fitness class.

My legs are burning badly and I’m exhausted, so tonight I’m just going to take it easy and not go for a 2 mile-ish run. Listening to the body. 🙂

My stomach grumbled during the tail end of class, so I was excited to shower and doll up as quickly as I could so I could attack my lunch. Even though it’s not Paleo because of the bread, it doesn’t bother me. So far today I have eaten strictly Paleo, and I want to go into this starting off eating 70% Paleo and working my way up to a more strict Paleo lifestyle. I refuse to say diet, it’s a lifestyle choice.
