Paleo Almond Butter Pancakes.. It’s What’s for Dinner

I had my mind-set on dinner all day. Once I know what I want to eat, there’s nothing else I will shove into my mouth. Today, I was dead set on Paleo Almond Butter Pancakes, a recipe that I came across from Julie, aka Peanut Butter Fingers, aka my favorite blogger, aka my life idol.

Almond Butter Pancakes

  • 1 cup almond flour
  • 1/4 cup almond butter
  • 3 eggs
  • 1 tablespoon honey
  • 1 teaspoon cinnamon

Directions:

  • Heat pan to medium heat, spray pan with cooking spray and let heat up
  • Mix all ingredients together and pour the batter into the pan
  • When the bottoms brown, flip to the other side to your perfection
  • Top with anything your little heart desires and eat away

I doused mine in maple syrup. Now that’s Paleo. Go ahead and judge me. The pancakes were too delicious for me to even care.

My only concern was that the batter wasn’t runny enough. I literally had to work the batter off the spoon. I’m thinking maybe less flour next time or an additional egg white. I love playing around with recipes so once I buy a new jar of almond butter this weekend, that’s the first thing I plan on doing!

I Went to Summer Camp!

Every summer, Child & Family Services sends underprivileged kids between the ages of 8 and 14 to Camp Spaulding, for 2 week sessions. There, the kids get to play on the ropes course, practice their archery skills, canoe and kayak along the river, swim, create arts & crafts, learn woodcraft, and various other summer camp activities. The best thing is that the families don’t have to pay for their kids to make life-long memories, and the kids also don’t know that this is an underprivileged summer camp.

For the past several years, my company has collected money from our employees, and purchased games, equipment, and necessities for the kids and camp. This year, we collected over $200 and bought the kids various kits, puzzles and games to create “Rainy Day Kits” for each cabin. Because of our donation, the camp invited us to come down for the day and get a feel for what Camp Spaulding is all about and get to meet and hang out with the campers.

The marketing department left the office around ten this morning and headed off to camp! Felt like I was a kid again. We received a tour of the camp, where we got to peek into the boys camp and the girls camp, and got a glimpse into all the different activity areas. After a tour and history of the camp, we went into the dining hall where we got to sit with the kids at lunch tables and enjoy the typical lunch routine. The kids all had responsibilities, whether bringing the food to the table, clearing the table and putting everything away. It was great to connect with the kids and see the happiness that they get from attending summer camp.

Upon getting back to the office, I was wiped out and ready for a nap. I powered through the work day with my strawberry banana Chobani yogurt with a dash of sunflower seeds and raisins, before calling it a day and hitting the gym.

I was WICKED hungry and had errands to run quickly after the gym so I didn’t want to overdo it.

Gaining on Paleo

It wasn’t hunger pains that woke me up in the middle of the night, but an insane and terrifying thunder and lightning storm that nearly caused me to pee the bed. What am I 6 again? I love thunderstorms during the morning, during the day and during the evening. Especially during summer. Wake me up in the middle of the night with a storm, and well, that’s a COMPLETELY different story. Talk about making an adult feel like a child. Guess who said a prayer at 2 am asking for the lightning not to hit the house. Yup. This girl. Hey, God was listening.

Lack of sleep made me sit in bed a few extra minutes, acting all grumpy and cute. The dilly dallying showed in my morning workout, as I was only able to get in 3.3 miles.

Morning Workout

  • 3.3 mile run, with post-run stretching
  • 2 sets of 50 crunches and side-to-side crunches
  • 25 reverse crunches
  • 15 stair push ups
  • 2 sets of 30 second plank
  • 2 sets of 20 mountain climbers
  • 100 jumping jacks

Disappointment hit when I stepped on the scale and saw that I have gained a considerable amount of weight. Could be water weight, could be weight from the nuts I’m eating. It’s definitely left me with questions, but I have read that you do gain a little on Paleo but that it evens out in the end? I’m trying so hard not to go for my old typical breakfast of oatmeal, but deep down, I have a guilty conscience hanging over me telling me not to.

I hope my coworkers don’t judge my weird breakfast I chose instead.

I’m not a quitter so I’m going to stick through this, do a lot more research and try to prepare delicious snacks that won’t tempt me.

On a brighter note, today the marketing ladies and myself are heading out to Camp Spaulding, a local summer camp that we donated hundreds of dollars of games to. It’s going to be muddy but I can’t wait to go to camp. It’s been years!
